Oxtail Cooking Guide
Base Ratio
- Per 1 lb oxtail:
20 g seasoning + 2 cups water (0.125 gallon)
For Rich Gravy
Add:
- +40 g seasoning
- +4 cups water (0.25 gallon)
Example Batches
- 2 lb: 120 g seasoning, 6 cups water (0.375 gal)
- 5 lb: 180 g seasoning, 12 cups water (0.75 gal)
- 10 lb: 280 g seasoning, 22 cups water (1.375 gal)
- 15 lb: 380 g seasoning, 32 cups water (2 gallons)
Cooking Directions
- Place oxtail in a large pot
- Add seasoning and water based on ratios above
- Stir well to combine
- Bring to a boil
- Reduce heat, cover, and cook for 2.5–3.5 hours or until tender
- Stir occasionally and allow liquid to reduce into a rich gravy
Jerk Marinade Directions
- Use 2–3 tbsp per lb of meat
- Coat evenly and marinate for at least 4 hours (overnight recommended)
- Cook by grilling, baking, or pan-searing
- Brush additional marinade during cooking for deeper flavor
Jerk Sauce Uses
- Finish grilled or roasted meats
- Use as a dipping sauce
- Brush on during cooking for a sticky, caramelized glaze
- Mix into dishes for added heat and sweetness
